Tanfu Restaurant serves special Tan cuisine (feudal official cuisine) that originates
from the family banquet of Tan Zongjun----a local authority of Qing Dynasty. When the authorities had their own chefs who created many flavored cuisines that later formed the feudal official cuisine, the Tan cuisine is the only one that is handed down through the generations as a typical official cuisine. There is a well known phrase stating "No one does not praise Tan in the cooking field based on the Cantonese food". Tan cuisine adopts the advantages of various cuisines, therefore compared with other cuisines, firstly, it has moderate sugar and salt, so it is suitable for both the North and the South; secondly it has sufficient cooking duration and ingredients so the food is soft and easy to digest, moreover suitable for the elderly; thirdly it uses the original fumet rather than the condiments such as aniseed and pepper.
The dishes are mainly prepared using the methods of baking, braising and soup rather than frying. There are some fine techniques as well such as scoop shaking and turning. Nowadays, the Tan cuisines are based on modern Cantonese food and at the same time take into account other cuisines' new techniques to satisfy the need of contemporary people. There are more than 300 dishes, among which is the most famous banquet of bird's nest and shark fin in which there are a dozen cooking methods for the shark fin. Yellow stewed shark fin is a top grade dish, with special quality Luzon yellow sauce. It takes 2-3 days to prepare this dish. Additionally braised abalone, pawpaw with bird's nest and abalone extract are all signature dishes. To satisfy contemporary needs, Tan cuisine is reinventing and designing many new delicious and healthy foods such as pumpkin braised with shark fin and pawpaw extract braised with shark fin.
